Verities of foods has its own significance form many centuries. Throught decades the tradition of foods has link to divine and worship of God, as “Kachoodi” in Chaat Pooja, “Sandesh” in Kaali Pooja, “Laddu” in Ganesh Pooja etc. Similarly, I am going to inform you about one of the most popular dish in Uttar Pradesh i.e., “Kofta”.
This is one of the most common dishes of Uttar Pradesh, nearly about soul of every family. This dish is available in both veg and non-veg cuisine. It is a curry-based dish with meat or vegetable made balls soaked in it. The spices added to its curry make a great combination. It is paired with either chapattis or rice.

The ingredients that are used for this dish is as follows:
- 500g of ground beef / lamb,
- 1 onion,
- 1 egg,
- 2 tablespoons of bread crumbs,
- 1 teaspoon of black pepper,
- 2 teaspoons of cumin,
- 1 handful of chopped parsley,
- Salt,
- Vegetable oil.
Preparation steps used for the dish:
- firstly, peel and grate lauki. add salt squeeze well.
- also add in besan and spices.
- mix well and prepare kofta.
- coat with corn flour and deep fry.
- drain and keep aside.
lauki kofta preparation recipe:
- firstly, heat oil and add in cumin and bay leaf.
- further add turmeric and chilli powder.
- add in prepared onion tomato paste and saute well.
- additionally, add in coriander powder and salt.
- add in leftover lauki water and curd.
- mix well and boil.
- add kasuri methi and garam masala powder.
- transfer the gravy to a serving bowl and place lauki.
- finally, garnish with coriander and serve lauki kofta curry with roti.
